Meine gute my house smells good! I have a killer pork roast in the crock pot for a new recipe that I am trying that will appear here soon and I just pulled these brownies out of the oven! Today's baking adventure is dedicated to 1-My handsome hubby who made my day from the start when I heard him first thing this morning unloading the dishwasher! 2- My econ class which is single handedly going to turn my hair gray before I hit 27 and 3- to Dan and Luisana up their in Alaska who were the first to sample this little creation last year and who we miss hanging out with!
I think these pictures say it all . . . graham cracker crust, ooey gooey brownies, chocolate chips and toasted marshmallows! Now all we need is a camp fire! This seriously is a huge splurge today with the way life is going but that is what stress does to me sometimes . . . I am either cleaning like crazy or in the kitchen baking . . . so stress . . . my hubby thanks you this week!

Crust layer:
4 tbsp unsalted butter
1 cup Graham Cracker crumbs
1 1/2 Tbsp Sugar
Pinch of Salt
Brownie layer:
2 Eggs
1/2 cup Butter
5 Tbsp Cocoa powder
1 cup Sugar
1 tsp Vanilla
1/2 cup plus 1 Tbsp Flour
1/4 tsp Baking Powder
1/2 cup Chocolate Chips
Pinch of salt
Topping:
1 1/2 cups mini Marshmallows
1. Start the crust by melting the 6 tablespoons of butter, add the graham crackers crumbs, sugar and salt. Mix well until all of the crumbs are moist. Press crumb mixture into an 8x8 inch foil lined baking pan. Bake in a preheated 325 degree oven for about 15-20 minutes or until the crust is lightly browned.
2. For the brownie layer melt the butter in a microwave safe large bowl and then add the sugar and cocoa powder, mix well. Next add the eggs one at a time with a fork then mix in the remaining ingredients. Pour over the browned graham cracker crust and bake in for 40-45 minutes or until a toothpick inserted in the brownie center comes out clean.
3. Cover the top of the top of the brownies with the mini marshmallows and broil for about 2 minutes until the top is lightly browned.
4. Cool brownies on a wire rack by removing brownies from the pan by lifting the foil around the edges. Allow to cool and then cut. Enjoy!

Wow! I have to say that the only single thing that I liked about Girl Scouts was the S'Mores - and those I loved. These brownies look incredible!
Sorry... I'm laughing... those smores brownies just look so nasty.... sorry. Guess you just really have to love marshmallows to appreciate them. Sorry...

Holy Hannah Those brownies are sooo killerly good... why didn't I think of making them into oohe gooe smore' brownies with perfectly beautiful toasted marshmallows that look like they are to die for!!!
