My hubby loves eggs, he could eat them everyday for probably every meal . . . conflict: I am not a big egg eater, in fact to eat eggs they had better be loaded with veggies or something to take away from the "eggy-ness." So if my hubby wants them more often than not he makes them . . .Recipe by Mama P.
1 cup Flour
6 Tbsp Sugar
1 tsp salt
4 Eggs
1 1/3 cups Milk
2 Tbsp Butter, melted
1. Sift together flour, sugar, and salt. Set Aside.
2. Mix eggs and milk. Add to the flour mixture and whisk until lumps are gone. Pour in the melted butter and stir.
3. Heat a 6 or 8 inch skillet over medium heat. (lightly grease if needed) Ladle 1/4 cup batter onto skillet. Swirl the skillet to spread batter out evenly. Cook until lightly browned and roll up. Serve with syrup, jam, or fill with eggs, meat and veggies. Enjoy!
To make them "Chorizo Style" I cooked 1/2 cup chorizo, 4eggs, and 2 Tbsp milk together. Layered a skinny with a mixture of rice and black beans, and chorizo eggs. Top off with sour cream and diced tomatoes. (Shredded cheese, jalapenos, salsa, chilies etc. would also be great to top with!)

My Polish grandmother used to make pancakes like these (minus the fillings). I have always liked them so much better than traditional pancakes.

Well, I do believe that we make somthing similar to this; we call them swedish pancakes or my kids have always called them "roll up pancakes"! We do the jam, syrup, or lemon juice and powdered sugar for the fillings, but my hubby and I would really like your chirizo, savory filling version!!
